Local & Logical
We started local and we strive to stay local. From specialty ingredients like the coffee in our Espresso Truffle Filled Meringues to the staples like eggs and cream in everything we make, we try to source ingredients from suppliers we believe are quality, socially conscious and cool.
Meringues & Pavlovas
Our base vanilla meringues and pavlovas are simplicity itself.

Base meringues are gluten-free and fat-free. But, yes, they're pretty much pure sugar.
Variations
What we love most about our meringues and pavlovas is how endlessly creative we can get. Our classic meringue variations include:
- Truffle-filled (espresso, Irish cream, coconut)
- Chocolate Footed (a chocolate base, milk or white)
- "Celebration" (a chocolate base, dipped in nonpareils)
- Confetti (a rainbow swirl on the inside)
- Cocoa
- Limoncello
- Ginger Liqueur
We fill our pavlovas to-order, but some classic combinations include:
- Ginger Cream with Honey and Salted Pistachios
- Dark Chocolate Ganache with Vanilla Cream and Mixed Berries
- Cardamom Cream withToasted Almonds and Candied Oranges
- Cinnamon Cream with Candied Hazelnuts and Nutella Drizzle
- Mocha Ganache with Cayenne Cream
